Spinach Lasagna and Lemon Tart

The Spinach Lasagna was an original recipe by myself.
you will need:
1 pack frozen spinach
1 small carton cream cheese
1 onion
2 tbs butter
3 tsp garlic blended
8 lasagna noodles, cooked
1 maggi chicken cube
1 500g pack shredded mozzarella
2 cups of basic white sauce with sprinkle of nutmeg, seasoned with salt and pepper
salt and pepper to season spinach mix
Preparation:
Heat a pot on medium high heat and add butter, add onion and fry till transparent, add garlic, stir for 2-3 minutes, add spinach and maggi cube, and cook thoroughly. Take off heat and stir cream cheese into spinach and add white sauce to this mix, season cautiously and set aside.
Layer lasagna noodles in bottom of small baking pan, add spinach mix then mozzarella cheese to cover, then add another layer of spinach(all the rest) and then lasagna noodles then the last bit of mozzarella. Bake in oven at 175c for 30-40 minutes or until top is slightly browned.
Lemon Tart
350g ready made short crust pastry
1 tbs icing sugar
for the filling:
5 eggs
200g caster sugar
4 lemons,zest of one and juice of all
100 g butter,melted
125 ml single cream
Roll out pastry and use to line a 23 cm fluted,loose bottomed tart tin allowing the sides to come above the rim. Pinch edges, prick the base and chill 30 minutes.
Preheat oven to 200c. Line pastry with greaseproof paper and bake for 10 minutes. Remove paper and bake a further 5 minutes until just golden.
Reduce heat to 180c. Place the eggs,sugar,lemon zest in a food processor and blend for 1 minute, add the butter and blend for few seconds. Then add the lemon juice and cream and blend for just a second. Pour into tart case and bake for 30-35 minutes until filling is just set. Cool at room temperature. Top with icing sugar and candied lemon zest.

You know while I've had it before, I've never tried making a spinach lasagna. Look at how creamy yours is. I've bookmarked the recipe.

OMGoodness Cynthia thank you so much, but you know the funny thing is, the lasagna started out as cannelloni that was going to be stuffed with this spinach mixture, BUT I learned that "all cannelloni is not created equal"...ha ha, it just lost its shape completley when cooked, i couldnt stuff it so i got so mad i just pounded it into lasagna and made it this way, and VOILA! Spinach and Cream Cheese Lasagna came out of it...This recipe would be equally delicious if you added meat or chicken to it in the stuffing.

Oh and thank you for the compliment on my baking skills! They are VERY weak but I do try hard! I am getting braver with the whole baking process!

Mmmmm, the lasagna looks awesome. I can almost taste it! : ). I love the taste of lemon in tarts and pies ( What's the difference b/w tarts and pies anyway?) We dont get readymade shortcrust pastry here, so making a tart is quite a task sometimes. But now, I wanna try it inshaAllah. Take care! Hope you get better soon.La ba'sa tahooran inshaAllah!

I have NO CLUE whats the difference! LOL..Maybe tart is what they call the small sized one? You know you could use graham crackers or any sweet cookies crumbled into butter for the crust. I love these types of sweets because you dont really feel like you ate so much sweet stuff when you eat this, its not like eating a piece of chocolate the same size!

Nabeela:Thank you so much :) Yes the lasagna was a delicious mistake,lols...And the tart,although this is not my photo of it, was delicious when I did make it. But not as delicious looking as your chocolate ice cream! I think next time I might try apricot or peach...Actually Im craving peach cobbler so who knows!
